I replaced my knife storage block with a magnetic knife holder several years ago. There are many cooks who still use the trusty old knife block. The reason cooks use a knife block is to protect their knives from damage. Good cooks don’t relish the idea of throwing those one hundred dollar plus knives in a drawer, so they use a storage block. Knife blocks are made out of various materials ranging from wooden butcher block to plastic to aluminum, and just about everything in between.
